You either are or you aren't a fan of ‘guac’, but if it happens to be your thing, this version will set your tastebuds alight.
This recipe is from the amazing book Fire to Fork, which you will find in stock here. There are some cracking appetizer options in there if you don’t do avocado! The Jalapeno Poppers are a story for another day.
Nothing better than a platter with some wholefood goodness that you whipped up yourself. And I can vouch that its super simple! Ideal for Christmas entertaining.

GUACAMOLE
Prep Time 5 mins Cooking Time 0 mins Serves 2
Ingredients
- 1 ripe avocado
- 1/4 a red onion, diced
- 1/2 tomato, diced
- Salt and pepper
- 1/2 a lime
- Fresh coriander (optional) - Denise's favorite bit... ;)
Method
- Half the avocado and scoop out the flesh into a bowl or onto a chopping board. Mix in the onion, tomato and a few grinds of salt and pepper and squeeze the juice from your lime all over the top of it. Add some coriander to taste, if you like coriander.
- With a fork, roughly mash up the avocado at the same time as mixing all the ingredients. Serve it immediately with tortilla chips and a dash of sweet chili sauce or load it up onto nachos.
Denise's tip - if you love coriander, it's a must in this recipe and if you love a bit of heat add some pickled jalapenos into the mix. Using plain tortillas or corn chips is the best to bring out the flavor of the guac.
